Out of the Shell Pumpkin Uses

Want some other ideas for using your pumpkins this year? Tired of the same ole, same ole? Heres a fun list of creative ideas that causes this orange squash to rise above the rest! .

Pumpkin pie: 
(The following recipe is taken from King Arthurs Flour Baking Book)

Baking 4 pumpkin pies all in one night, with my friend Shannon

 
Crust
2/3 cup quick-cooking oats, ground for 30 seconds
1/3 cup whole wheat flour
1/3 cup unbleached all purpose flour 
2 tbsp firmly pack brown sugar (either light or dark)
3/4 teaspoon ground cinnamon
1/4 tspn salt
6 tlbs cold unsalted butter
4 tbsp of cold milk 
Filling:
1 3/4 cups canned pumpkin or 15 oz of fresh pumpkin 
3 large eggs 
1 cup honey 
1 cup of half and half (though cold milk might work as well)
1 tspn cinnamon
1/2 tspn ground ginger
1/2 tspn nutmeg
1/2 tspn salt 
Wisk oats, flours, sugar, cinnamon  and salt in med. bowl. Work butter into ingrediants by cutting it into smaller chunks and mixing it with your hands or fork- work until dough is crumbly. Pour in milk slowly, mixing until dough is sticking together, and not dry or crumbly when you pick it up with your hands. 
Shape into a disk and work on a floured surface, pat until it’s 1 inch think, wrap in plastic wrap and place in fridge for (up to) 3 days.
30 minutes before making the pie, take dough out of fridge and allow to warm about 15-30 mins. 
Preheat oven to 425F. 
Pumpkin Muffins

Bite sized pumpkin muffins

Ingrediants
1 egg
1/2 cup milk
1/2 cup pumpkin- cooked and mashed
1 1/2 cup flour
1/2 cup sugar
2 teaspoons baking power
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/2 cup raisins or pitted dates 
Directions:
Preheat Oven to 350 F
Stir together egg, milk, pumpkin and oil in a bowl.
In another bowl, mix dry ingrediants.
Once both mixtures are mixed completely, then add them together and mix. 
Fold in raisins or dates
Pour into pregreased muffin cups and bake for 18- 20 mins

Pumpkin Smoothies
(Takes like Pumpkin Pie in a Cup!)
Throw in blender or food processor 
1 can of pumpkin (or equivalent amount fresh)
1 apple
1 banana
1 cup of Vanilla Almond Milk 
A dash of Nutmeg
A dash of Cinnamon
A dash of Ginger 
2 cups of Ice
Blend until Smooth!
* If you like a stronger tasting drink just add more of each spice. Top with whipped cream and crushed graham crackers 
Pumpkin Frap
1 Cup of dark roasted Coffee (of your choice) 
1/4 cup of pumpkin
splash of french vanilla coffee creamer 
Ice 
Pinch of Nutmeg
Pinch of ginger 
Make coffee in your Kurig or coffee pot
Pour coffee into a bullet or blender
Add pumpkin 
Add french vanilla coffee creamer 
Add ice
Blend together until smooth 
Pumpkin Decor:

For Kids: Just get your hotglue gun and your paintbrushes out and go crazy!  and paint  a pumpkin instead. You can make your pumpkin into a sign pointing to candy or paint a face or just splash lots of color. Glue on items can include: 
Googlie eyes
Ribbons
Buttons
Wrapped candy
Games:
Instead of using a ball, replace it with a tiny-to-med size pumpkin and see just what fun this crazy squash mix-up can be! 
 Bowling 
Pumpkin Smashing 
Boche Ball (pie pumpkins work best) 
Baseball or Softball
